  • 3 tbsp. dried bread crumbs
  • 1 tsp. chopped fresh parsley
  • 1/4 tsp. oregano
  • 1/4 tsp. grated lemon peel
  • 1 tbsp. 1/2 plus tsp. butter
  • 8 oz. scallops
  • 1 tbsp. lemon juice
  • 1 tbsp. dry vermouth
  • 1 cup minced garlic

    Combine crumbs, parsley, oregano and lemon peel in a mixing bowl.

    Add 1 tbsp.

    softened butter and mix well.

    Set aside.

    Preheat broiler.

    In shallow flameproof casserole, arrange scallops; mix together remaining ingredients and pour over scallops.

    Broil 6 inches from heat until scallops are opaque, 4 to 5 minutes.

    Sprinkle crumb mixture evently over scallops and broil until crisp and lightly browned, about 1 minute longer.
