  • 3 Tbsp. butter or margarine
  • 2 Tbsp. chopped parsley
  • 1/4 tsp. tarragon leaves
  • 1 clove garlic, finely minced
  • 3 Tbsp. chopped leeks (white part)
  • 2 Tbsp. fresh lemon juice
  • 4 doz. (2 lb.) scallops
  • 1/2 c. bread crumbs

    Melt 3 tablespoons butter or margarine.

    Add next five ingredients and mix.

    Add bread crumbs.

    Arrange 6 scallops in each of 8 sea shells or small individual casseroles.

    Top each with 1 tablespoon crumb mixture.

    Bake in preheated oven at 500° for five minutes.
