- 2 lb. fresh sea scallops
- 4 Tbsp. butter, melted
- 1/2 c. dry vermouth or dry wine
- 1/4 c. lemon juice
- 1 c. fresh seasoned bread crumbs
- 1/2 lb. Vermont Cheddar cheese, grated
Directions

1Preheat oven to 375°.

2Place scallops in large ovenproof casserole.

3Drizzle each portion with 1 tablespoon butter, 2 tablespoons vermouth and 1 tablespoon lemon juice.

4Top with bread crumbs.

5Bake 15 to 20 minutes or until scallops are almost firm. Top with grated cheese.

6Bake 2 minutes longer or until cheese is melted golden brown.

7Serve with a side of pasta and a fresh green salad.
