  • 3/4 lb. scallops
  • 1/2 c. white wine
  • 1 c. water
  • 3 sprigs parsley
  • 1/2 bay leaf
  • 6 peppercorns

Directions

    If using sea scallops, cut into 2 or 3 pieces.

    In saucepan, combine scallops with wine, water, herbs and peppercorns.

    Simmer 2 to 3 minutes.

    Strain, reserving liquid (about 1 1/2 cups).
