Scandinavian Fruit Soup

  • 1 c. pitted dried prunes
  • 1 c. dried apricots
  • 1/4 c. light raisins
  • 1/4 c. dark raisins
  • 1/2 lemon, sliced
  • 3 (4-inch) cinnamon sticks
  • 1/4 c. sugar
  • 3 Tbsp. quick-cooking tapioca
  • 1 apple, pared and cubed
  • 6 c. water

Directions

    Combine all ingredients, except apple.

    Bring to boil, stirring.

    Cover and cook 20 minutes, stirring occasionally.

    Add apple cubes, simmer, covered, for 5 minutes.

    Remove cinnamon. Serve warm or cold as a dessert. Makes about 8 to 10 servings.
