- 4 cups self-rising flour, plus extra for dusting
- 2 teaspoons baking powder
- A pinch of salt
- 7 tablespoons butter, at room temperature
- 4 tablespoons superfine sugar
- 1 cup milk
Directions

1Preheat the oven to 450 F. Lightly dust a large baking sheet flour.

2Sift the flour, baking powder and salt into a large bowl and stir well.

3Crumble in the butter and rub it into the flour with your fingertips to make fine crumbs.

4Stir in the sugar.

5Using a fork, stir in the milk gradually just enough to bring it into a soft, slightly sticky dough which you should handle as little as possible.

6Add a drop more milk if necessary.

7Sprinkle some flour over your worktop and turn the dough out on to it.

8Flour your hands and bring the dough into a ball.

9Using a lightly

10floured rolling pin, roll the dough out to a thickness of 34 in.

11Using a 2 in cutter, stamp out a round and place it on the baking tray.

12Cut out as many more scones as you can.

13Bring the remaining scraps of dough into a ball and roll out again to make the last few scones.

14Dust the scones with a little flour and bake in the centre of the oven for 10-12 minutes or until well risen and golden.

15Cool on a wire rack.
