- 6 Poblano Peppers
- 1 lb Macaroni
- 1 Medium Onion
- 1/2 Cup + 2 Tbs Butter
- 1/2 Cup Flour
- 2 Cups Heavy Cream
- 1 Cup Milk
- 12 oz Monterrey Jack Cheese, Grated
- 4 oz crumbled Feta Cheese
- 1 tsp salt
- 1/4 cup Parmesan Cheese
- 1/2 cup Breadcrumbs

1{"0":"Roast Poblano peppers under broiler, on the grill or on open flame until blistered and charred. Place in paper bag for about 10 minutes to loosen skins. Peel skins, discard seeds and membranes, and slice into thin strips.","2":"Cook macaroni according to package directions. Drain and rinse thoroughly with cold water.","4":"Finely chop onion and saute in 2 Tbs butter until soft. Set aside.","6":"Melt 1\/2 cup butter over low heat.
