- 7 eggs
- flour
- salt and pepper to taste
- breadcrumbs
- 1 (16 oz.) pkg. sausage meat
Directions

1Hard-cook 6 eggs for 10 minutes.

2Cool quickly by putting under cold running water.

3Remove shells.

4Divide sausage meat into 6 equal portions; flatten each piece so that it is big enough to go around an egg.

5Use flour to prevent it from sticking.

6Coat each egg with a little seasoned flour.

7Wrap sausage around each egg, joining the edges, so the egg is completely covered.

8Dip each sausage covered egg into lightly beaten raw egg, then into breadcrumbs.

9Deep fry for a few minutes, or shallow fry on all sides until nicely browned and sausage is cooked.

10Serve with salad.

11Scotch Eggs are also good for a picnic.
