- 1 lb. sausage or 1 lb. ham, ground
- 1/2 tsp. sage
- 1/2 tsp. thyme
- 2 Tbsp. minced parsley
- 1 c. bread crumbs
- 1/2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 8 hard-boiled eggs
- 2 eggs, slightly beaten
Directions

1Mix sausage (or ham) with herbs and shape into 8 round patties.

2Wrap meat around the hard-boiled eggs.

3Roll eggs in flour seasoned with salt and pepper, then in beaten eggs and bread crumbs.

4Deep fry in hot fat until sausage is cooked or bake in 375° oven for 20 to 25 minutes.

5Bake ham covered eggs in 350° oven for 20 to 30 minutes or until done.

6I add a beaten egg to ham mixture to help hold it together.

7To serve, cut eggs in quarters lengthwise.
