- 6 hard-boiled eggs
- bread crumbs
- 1 egg, slightly beaten
- frying oil
Directions

1Divide the sausage meat into 6 (4 ounce) portions.

2Shell the eggs; dip in flour.

3Coat each egg with egg and bread crumbs.

4Fry in hot (but not smoking) oil, turning carefully (roll over) every minute or two to cook evenly until browned all over, about 25 minutes cooking time in all.

5Cut each egg in half. Serve hot with tomato sauce or cold with salad greens.
