- 1 c. flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. shortening
- 1 c. quick cooking oats
- 1/2 c. chopped pecans
- 1 c. brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 c. shredded coconut
Directions

1Sift together the flour, soda and salt.

2Cream shortening; beat in sugar slowly.

3Add egg and vanilla; beat until light and fluffy.

4Stir in flour mixture, then the oats, pecans and coconut. Drop from a teaspoon onto greased cookie sheets.

5Flatten to 1/8-inch thick with bottom of a glass dipped in flour.

6Bake at 325° for 12 to 15 minutes.

7Remove from pan immediately.

8(I always used to bake 2 or 3 batches at once.
