Scrambled Egg Salad

- 1 dozen Eggs
- 1 stick Butter or enough olive oil to scramble the eggs
- 1/4 cup Mayo, more or less to taste
- 3 tbsp Mustard, more or less to taste
- 1/4 cup Dill pickle relish, or leave it out
Directions

1This is more of a method rather than a recipe.

2You can use your own egg salad recipe with this.

3Melt 1 stick of butter in a nonstick skillet over med low heat.

4In another bowl, crack 12 eggs and break them up with a fork.

5Slow scramble them over med low heat.

6I do this with a rubber spatula.

7Gently fold and push the eggs as you cook them.
-
8Don't let Let them brown at all.

9Cook to desired doneness and immediately put in a bowl to cool.

10I've always told my girls, if the skillet is clean when you remove the eggs, you did it right.

11Dress your eggs with all your ingredients and eat it now instead of later.
