Ingredients

  • 3 lb. yellow summer squash, sliced
  • 1/2 c. chopped onion
  • 3/4 c. cracker meal or bread crumbs
  • 2 eggs
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. butter, melted
  • 8 to 10 crackers

Directions

    Cook sliced squash in water.

    Drain well and mash with potato masher.

    Add all remaining ingredients, except 1/2 of the melted butter and the crackers.

    Pour mixture into a nongreased loaf baking dish, then pour the rest of the butter and cracker crumbs on top.

    Bake at 375° for 50 minutes or until brown.

    Yields 4 to 6 servings.
