- 3 lb. yellow summer squash, sliced
- 1/2 c. chopped onion
- 3/4 c. cracker meal or bread crumbs
- 2 eggs
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. butter, melted
- 8 to 10 crackers
Directions

1Cook sliced squash in water.

2Drain well and mash with potato masher.

3Add all remaining ingredients, except 1/2 of the melted butter and the crackers.

4Pour mixture into a nongreased loaf baking dish, then pour the rest of the butter and cracker crumbs on top.

5Bake at 375° for 50 minutes or until brown.

6Yields 4 to 6 servings.
