Ingredients
- 1 lb. pinto beans
- 3 (14 oz.) cans stewed tomatoes
- 2 cloves minced garlic
- 1 lb. chopped green peppers
- 1 1/2 lb. sliced onions
- 1/2 c. chopped parsley
- 3 lb. lean ground beef
- 2 Tbsp. oil
- 1/3 c. chili powder
- 2 tsp. salt
- 3 1/2 tsp. cumin seed
Directions

1Wash beans and soak in water overnight.

2Simmer in covered pot for 2 to 3 hours (until tender). Simmer in same water.

3Add stewed tomatoes and simmer 5 minutes. Saute garlic, onions and green peppers in 1 tablespoon oil for 15 minutes.

4Add to bean mixture. Brown beef in skillet.

5Drain.

6Add to bean mixture.

7Add seasonings and simmer, covered, for 2 hours.

8Remove cover and cook slowly for 30 minutes more.
