- 4 or 5 medium zucchini, sliced 1/4-inch thick
- 3 medium carrots, shredded
- 1 medium onion, chopped
- 1 can cream of chicken soup
- 2 Tbsp. butter
- 1 c. sour cream
- 1 c. seasoned bread crumbs
Directions

1Boil zucchini until tender. Saute carrots and onion in butter until limp.

2Mix soup and sour cream. Add vegetables.

3Pour into greased casserole.

4Put bread crumbs in 1 tablespoon of butter and heat until coated.

5Sprinkle on top of casserole.

6Bake at 350° for 30 minutes.
