- -2 large flounder filets, or other good baking fish
- -1/2 lb unpeeled medium shrimp(headed)
- -1/2 lb crab meat
- -1/2 dozen or so clams
- -1/4-1/2 lb scallops(if using sea scallops you can cut them into smaller pieces if needed)
- -sliced sweet onion
- -2 medium potatoes, sliced thinly
Directions

1Spray a 13x9 or 8x8 baking pan with cooking spray. Place a layer of the potatoes and onions, then the fish filets, sprinkle with half the crabmeat. Sprinkle with a little salt and pepper. Next layer-more potatoes, onions, and the scallops. Cover tightly with foil and bake at 350 for about an hour,or until potatoes are tender. Uncover, and scatter shrimp and clams on top, re-cover and continue to cook til clams are open.Be sure to toss out any clams that do not open. Serve in a shallow bowl and sop up the pan juices with your favorite cornbread.So easy and no added fat.
