- 1 green pepper, chopped
- 1/2 c. sliced celery
- 2 Tbsp. oil
- 1 1/2 c. water
- 1 bay leaf
- 1 tsp. salt
- 1/4 tsp. thyme
- 1/8 tsp. pepper
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 1 (6 oz.) can tomato paste
- 2 c. cooked seafood (shrimp, etc.)
Directions

1Cook vegetables in oil until tender.

2Add tomato paste, water and seasonings. Simmer 15 minutes. Stir occasionally.

3Add seafood and heat through.

4Serve on hot rice.
