Ingredients
- 1 lb. okra, sliced
- 2 lb. shrimp, peeled
- 1 8-oz. can whole tomatoes
- 2 onions, chopped
- 1 1/2 qt. water
- 1 Tbsp. parsley, chopped
- 2 cloves garlic, chopped
- 1 Tbsp. flour - heaping
- 1 1/2 Tbsp. cooking oil
- 1 bay leaf
- 1/8 tsp. thyme
- Salt & pepper to taste
Directions

1Put oil in large pot and brown flour stirring constantly. Add onions, garlic and parsley and cook until seasonings are soft

2Add peeled shrimp and cook until shrimp turns pink.

3Add okra and keep stirring.

4Cook another 5 minutes.

5Add the can of tomatoes, then add about 1 1/2 quarts water.

6Add bay leaf, thyme, salt and pepper.

7Cook about 2 hours.

8Serve over rice.
