- 1 to 2 red peppers, depending on size
- 1 to 2 green peppers, depending on size
- 1 large onion
- 2 tomatoes
- 2 swordfish steaks
- 16 medium size shrimp
- 16 scallops
- 1/2 c. olive oil
- 2 cloves garlic, chopped
- fresh parsley
- salt and pepper to taste
Directions

1Cut all vegetables into 2-inch chunks.

2Peel and devein shrimp. Cut swordfish into 2-inch chunks.

3Alternate vegetables and fish on 4 skewers.

4Marinate in olive oil, garlic and fresh parsley for 1 hour.

5Broil for 10 minutes.

6Remove skewers, keeping shape.

7Serve over Saffron Rice.
