- 2 cloves crushed garlic
- 1/2 lb. medium shrimp, chunks
- 1/2 lb. sea scallops, cut in half
- 2 Tbsp. olive oil
- 1 c. minced onion
- 2 cloves minced garlic
- 1 1/2 c. arborio rice
- 1 c. clam broth, hot
- 2 c. boiling water
Directions

1Slowly add the ingredients and cook until absorbed.

2Add 2 tablespoons brandy or cognac.

3Add seafood to rice mixture.

4Stir in remaining 1/4 cup olive oil.
