  • 2 Tbsp. olive oil
  • 2 cloves crushed garlic
  • 1/2 lb. medium shrimp, chunks
  • 1/2 lb. sea scallops, cut in half
  • 2 Tbsp. olive oil
  • 1 c. minced onion
  • 2 cloves minced garlic
  • 1 1/2 c. arborio rice
  • 1 c. clam broth, hot
  • 2 c. boiling water

Directions

    Slowly add the ingredients and cook until absorbed.

    Add 2 tablespoons brandy or cognac.

    Add seafood to rice mixture.

    Stir in remaining 1/4 cup olive oil.
