Ingredients
- 2 Tbsp. butter
- 2 green onions, finely chopped
- 1 to 2 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. cooked rice
- 1 c. finely chopped seafood
- 4 egg yolks
- 5 egg whites
- 1 Tbsp. flour
Directions

1Melt butter in saucepan without browning; add onions and stir at low heat 2 minutes.

2Add curry powder and flour; stir until thoroughly blended.

3Add milk; cook and stir over medium heat until creamy.

4To sauce add salt and pepper, rice and seafood of your choice.

5Stir until well mixed.

6Cover and let cool 10 minutes.

7Add slightly beaten yolks, stirring briskly.

8Beat egg whites stiff not dry.

9Pour into 1 1/2-quart baking dish in preheated 350° oven for 45 to 50 minutes.
