Ingredients
- 1/4 lb. diced salt pork, ham or smoked pork butt
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 1 clove garlic, minced
- 1 Tbsp. vegetable oil
- 1 1/2 c. long grain rice
- 3 c. boiling water
- salt and pepper
Directions

1Cook salt pork, onion, tomato and garlic in vegetable oil over medium heat.

2Stir frequently until onion is tender, about 5 to 7 minutes.

3Stir in rice and cook 5 minutes.

4Stir in boiling water. Reduce heat to low.

5Simmer.

6Cover 10 minutes.

7Remove cover and cool, stirring frequently until liquid is absorbed and rice is fluffy, 15 to 18 minutes.

8Season with salt and pepper.

9Makes 6 servings.
