Secret Vegetable Casserole

  • 1 pkg. frozen Italian vegetables
  • 1 c. grated sharp Cheddar cheese
  • 1 c. diced celery
  • 1 medium onion, chopped
  • 1 small can sliced water chestnuts
  • 2/3 c. mayonnaise
  • 1 stick margarine, melted
  • 1 tube Ritz crackers

Directions

    Cook celery and onion in butter until tender (save portion of butter for topping).

    Cook vegetables according to package directions.

    Drain well and mix with celery, onion, water chestnuts, cheese and mayonnaise.

    Put in buttered casserole dish and top with crumbled Ritz crackers, mixed with remaining butter. Bake at 325° for 30 minutes or until casserole is hot and bubbly and cheese has melted.
