  • 1 1/4 c. sifted unbleached flour
  • 1 c. cornmeal
  • 1 Tbsp. baking powder
  • 2 Tbsp. each vegetable shortening and cold unsalted margarine, cut into bits
  • 1/2 c. shredded sharp Cheddar cheese
  • 2/3 c. skim milk
  • 1 large egg white
  • 2 Tbsp. sesame seeds

    Preheat oven to 425°.

    Grease a large baking sheet.

    In a large bowl stir together the flour, cornmeal and baking powder. Add the shortening and butter and blend with your fingers until the mixture resembles coarse meal.

    Mix in the cheese.
