  • 1 gal. 5 or 6-inch cucumbers
  • 2 Tbsp. coarse canning salt
  • 5 lb. sugar
  • 2 Tbsp. whole mustard seed
  • 2 Tbsp. celery seed
  • 1/2 tsp. turmeric
  • apple cider
  • 1/2 tsp. mace
  • 1 1/2 sticks cinnamon

Directions

    Wash cucumbers and pack in gallon jar.

    Add canning salt; fill with apple cider.
  3. 3
    Soak for 6 weeks (date the jar).

    After 6 weeks, rinse and cut cucumbers fine into gallon jar.

    Add the 5 pounds sugar (1 cup at a time).

    Add spices.

    Shake after each layer of sugar until you have used all the sugar.

    Shake every week for 2 or 3 weeks.

    Open and eat.
