Ingredients

  • 1/2 pound pork loin thinly sliced
  • 1/2 cup pineapple 1/4-inch slice
  • 1 tomatoes julienne
  • 4 leaves collard greens large chunks
  • 1/4 bunch bok choy large chucks
  • 4 basil leaves chiffonade
  • 1/4 cup oil
  • 8 cloves garlic sliced
  • 1/2 red onion julienne
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 3 tablespoons honey
  • 1 teaspoon fish sauce
  • 3 tablespoons lime juice
  • 3 tablespoons mirin
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 tablespoon black pepper

    1. Mix all ingredients for sauce and set aside

    2. Season pork with dry rub and 4 tablespoons of sauce, let marinate for 2 hours

    3. Heat a wok and add collards and saute for 3 minutes, add pork and saute additional 4 minutes. Add Remaining ingredients and garnish with tomatoes and basil.
