- 4 meaty lamb shanks
- 2 cloves garlic, minced
- 1 large onion, chopped
- 1/2 c. celery, chopped
- 1 bay leaf
- 1 tsp. oregano leaves
- 1 c. tomato sauce
- 1 c. red or white wine
- salt and pepper to taste
Directions

1Combine all ingredients in Dutch oven.

2Add 2 cups water. Cover and bake at 350° for 1 1/2 hours.

3Uncover and bake for 1 more hour or until meat is very tender and sauce thickens.

4Serve over rice.
