Sheepherder Lamb Shanks

  • 4 meaty lamb shanks
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 1/2 c. celery, chopped
  • 1 bay leaf
  • 1 tsp. oregano leaves
  • 1 c. tomato sauce
  • 1 c. red or white wine
  • salt and pepper to taste

Directions

    Combine all ingredients in Dutch oven.

    Add 2 cups water. Cover and bake at 350° for 1 1/2 hours.

    Uncover and bake for 1 more hour or until meat is very tender and sauce thickens.

    Serve over rice.
