  • 2 Tbsp. canola oil or Pam
  • 2 Tbsp. finely chopped onions
  • 2 c. thawed, frozen spinach, chopped (10 oz. box)
  • 1/2 c. chicken broth
  • 1 tsp. garlic
  • pepper to taste
  • 1 c. part skim Ricotta cheese
  • 1/4 c. skim milk
  • dash of nutmeg
  • 2 Tbsp. Parmesan cheese
  • 6 medium pasta shells, cooked and drained

    Preheat oven to 425°.

    Spray an 8-inch square pan.

    Heat oil in skillet; saute onions and garlic.

    Add spinach, chicken broth and pepper; mix.

    Add Ricotta and milk; stir.

    Add nutmeg and 1 tablespoon Parmesan cheese.

    Add shells.

    Put in the 8-inch square pan.

    Sprinkle with 1 tablespoon Parmesan cheese.
