- 2 Tbsp. canola oil or Pam
- 2 Tbsp. finely chopped onions
- 2 c. thawed, frozen spinach, chopped (10 oz. box)
- 1/2 c. chicken broth
- 1 tsp. garlic
- pepper to taste
- 1 c. part skim Ricotta cheese
- 1/4 c. skim milk
- dash of nutmeg
- 2 Tbsp. Parmesan cheese
- 6 medium pasta shells, cooked and drained
Directions

1Preheat oven to 425°.

2Spray an 8-inch square pan.

3Heat oil in skillet; saute onions and garlic.

4Add spinach, chicken broth and pepper; mix.

5Add Ricotta and milk; stir.

6Add nutmeg and 1 tablespoon Parmesan cheese.

7Add shells.

8Put in the 8-inch square pan.

9Sprinkle with 1 tablespoon Parmesan cheese.

10Bake for 20 minutes.
