  • 2 lb. ground beef
  • 1 can tomato soup, diluted with 1 can water
  • 1 c. shredded Cheddar cheese
  • 1 large onion, chopped
  • 1 large can mixed vegetables
  • 2 c. fresh mashed potatoes or instant potatoes to make 2 c.

Directions

    Saute ground beef and onion together.

    Drain.

    Combine with mixed vegetables and the diluted soup.

    Place in a large casserole dish.

    Cover with mashed potatoes and sprinkle cheese on top. Bake at 350° for 1 hour or until the potatoes start to brown and the cheese is melted.
