  • 2 3/4 c. flour
  • 1 3/4 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. grated lemon rind
  • 1 c. Spry
  • 3/4 c. milk
  • 1 1/2 tsp. vanilla
  • 3 eggs
  • 1 egg yolk

Directions

    Sift flour, sugar, baking powder and salt into mixing bowl. Add lemon rind.

    Drop in Spry.

    Add vanilla, milk and 1 egg.

    Beat for 2 minutes.

    Add remaining 2 eggs and yolk.

    Beat 2 minutes. Bake in tube pan at 375° for 55 to 65 minutes.
