  • 1/2 c. soy sauce
  • 2 c. sherry
  • 2 Tbsp. sugar
  • 3 cloves garlic
  • 1 thin slice ginger, finely chopped or dash of ginger powder
  • 2 Tbsp. peanut oil
  • 1 to 2 lb. chicken parts

    Heat skillet on moderate fire (300°).

    Add oil and heat thoroughly.

    Brown chicken on all sides.

    Drain off excess oil. Combine soy sauce, sherry, sugar and garlic.

    Pour into pan with chicken.

    Bring to a boil.

    Boil for 25 minutes in a covered pan. Reduce heat and simmer for 15 minutes.
