Sherry Sponge Cake

Ingredients

  • 3/4 c. ground almonds
  • 1 1/4 c. flour
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 8 eggs, separated
  • 1 1/2 c. sugar
  • 1/2 c. sherry or milk
  • 1/3 c. orange juice
  • orange zest
  • orange slices

Directions

    Sift dry ingredients together.

    Add almonds; mix 8 yolks and then add sugar, sherry or another 1/2 cup orange juice along with 1/3 cup orange juice.

    Add dry mixture; mix together.

    Fold in beaten egg whites.

    Put in ungreased baking pan (spring-form). Bake in a 325° oven for 1 hour.

    Cool for 45 minutes.

    Garnish with powdered sugar, orange zest and orange slices.
