Shipwreck Casserole

  • 1 cup chopped onion
  • 3 medium potatoes sliced
  • 1 1/4 pounds lean ground beef
  • 1/2 cup long grain rice uncooked
  • 1 cup carrots chopped
  • 1 cup chopped celery
  • 1 can tomato soup
  • 1 can mushroom soup
  • 1 cup boiling water

Directions

    Butter a 2 1/2 quart casserole.

    Pre-cook the beef, with onion, celery, and carrots.

    Layer potatoes (sprinkling with salt, pepper and paprika), then add the beef mixture, and then sprinkle rice on top pressing down firmly into mixture.

    Combine condensed soup with the boiling water in a separate bowl and pour over on-top of casserole.

    Bake at 325° for aprx 2 hours.
