Ingredients

  • 1 c. potato chips, crushed fine
  • 1 1/2 lb. ground chuck
  • 2 eggs
  • 2 Tbsp. Parmesan cheese
  • 1/4 c. parsley, snipped
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 4 slices bacon, cut in 1-inch pieces
  • 1/2 c. canned mushroom caps
  • 2 green peppers, cut in 1-inch squares and parboiled
  • 3 tomatoes, cut in wedges
  • 1/4 c. butter, melted (garlic-flavored, if desired)

Directions

    Combine crushed chips with ground chuck, eggs, cheese, parsley, salt and pepper.

    Mix lightly but thoroughly.

    Shape mixture into 30 balls, about 1-inch in diameter.

    Arrange meat balls, bacon slices, mushrooms, green peppers and tomatoes alternately on skewers.

    Baste with butter and cook over low heat 10 to 15 minutes, turning and basting every 3 to 4 minutes.
