  • 2 cans Shoe Peg corn, drained
  • 1/2 c. chopped onion
  • 8 oz. cream cheese
  • 1 stick oleo
  • 1 c. crumbled Ritz crackers
  • 1 can cream of celery soup
  • 1/4 c. chopped bell pepper
  • salt and pepper to taste
  • hot pepper (if like)

Directions

    Mix all ingredients, except crackers and oleo.

    Rub casserole dish with oleo.

    Pour mixture into casserole dish; smooth over top.

    Put the crushed crackers on top.

    Bake for 30 to 40 minutes in a 350° oven, or until bubbly and brown.
