- 1 c. flour
- 3/4 c. dark brown sugar
- 1 Tbsp. shortening
- 1 c. coconut
- 1 egg, slightly beaten
- 1 c. honey
- 1 Tbsp. baking soda
- 1 (9-inch) unbaked pie crust
- 1 c. hot water
Directions

1Mix flour, sugar, shortening and coconut to form crumbs. Reserve 1/2 cup for topping.

2In another bowl, mix egg, honey and 3/4 cup hot water.

3Add dry mixture.

4Dissolve soda in remaining 1/4 cup hot water and add to mixture.

5Pour into pie shell and sprinkle crumbs on top.

6Bake at 375° for 35 minutes.

7This pie will keep for several days without refrigeration.
