Ingredients
- 2 c. all-purpose flour
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1 1/2 tsp. baking soda
- 1/2 c. buttermilk
- 1/4 c. plus 2 Tbsp. butter or margarine
- 1 c. molasses
- 1 egg, slightly beaten
Directions

1Combine flour, cinnamon and nutmeg in a large bowl; mix well and set aside.

2Dissolve baking soda in buttermilk; stir well and set aside.

3Combine butter or molasses in a heavy saucepan; bring to a boil, stirring constantly.

4Add to the flour mixture.

5Stir in buttermilk mixture and egg.

6Pour batter into a greased and floured 10-inch cast-iron skillet.

7Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in the center comes out clean.

8Cool in skillet 10 minutes.

9Invert cake onto plate.

10Cut into wedges to serve.

11Makes 8 servings each with 370 calories, 10 g fat and 39 mg cholesterol.
