- 1 1/2 lb. raw shrimp, peeled and deveined
- 4 slices bacon
- 1 large onion, chopped
- 1/4 c. green pepper, chopped
- 1 clove garlic, minced
- 1 c. long grain rice
- 1 (16 oz.) can chopped tomatoes (undrained)
- 1 (10 oz.) can chicken broth
- 1 tsp. dried oregano leaves
- 1 tsp. salt
- lemon wedges
- chopped parsley
Directions

1Defrost shrimp if frozen.

2In large skillet, fry bacon and drain.

3Crumble and set aside.

4Reserve 2 tablespoons of bacon drippings.

5Add onion, pepper and garlic.

6Cook until tender, but not brown.

7Add rice to vegetable mixture, blending well.

8Cook until rice turns opaque and white.

9Add broth, tomatoes, oregano and salt.

10Bring to boil.

11Remove from heat and cover.

12Bake for 20 minutes at 350°.

13Add prepared shrimp and bacon to rice mixture.

14Cover.

15Return to oven for 10 minutes or until shrimp is pink.

16Fluff rice.

17Sprinkle with parsley and serve with lemon wedges.
