  • 6 oz. (about 1 c.) diced and cooked shrimp
  • 1 c. shredded nonfat or reduced fat Mozzarella cheese
  • 3/4 c. chopped plum tomatoes (about 2 1/2 medium)
  • 3/4 c. chopped fresh spinach
  • 1/4 c. chopped scallions
  • 1 tsp. crushed fresh garlic
  • 1 tsp. dried oregano
  • 1 long, thin loaf French bread (about 24 x 2 x 1-inch)
