- 1 1/2 lb. shelled shrimp
- 3 small onions
- 1/2 c. green pepper
- 1 qt. tomatoes
- 2 Tbsp. celery or parsley
- 2 c. Minute rice, cooked
- 2 garlic cloves, sliced
- 3 beef bouillon cubes dissolved in 1 c. water
- 1/2 c. sliced olives
- 1 stick margarine
- 3 hard-boiled eggs
- 1/4 c. red cooking wine or wine vinegar
Directions

1Brown shrimp in 1/2 stick margarine.

2Brown onion and pepper in 1/2 stick margarine.

3Combine onion, pepper, tomatoes, celery, garlic, bouillon and olives; simmer 35 minutes.

4Add wine and shrimp; heat thoroughly.

5Add rice and garnish with chopped eggs. Serves 5 or 6.
