Shrimp Casserole

Ingredients

  • 1 stick margarine, melted
  • 1 c. chopped celery and leaves
  • 1/2 c. chopped green pepper
  • 1 can Ro-Tel tomatoes with chilies
  • 1 1/2 to 2 lb. cleaned, cooked shrimp
  • 1 (8 oz.) pkg. mushrooms, diced
  • 1 lb. Velveeta cheese, cubed
  • 1 can stewed, diced tomatoes, drained

Directions

    Simmer margarine, celery and green pepper.

    Add Ro-Tel tomatoes, mushrooms, Velveeta cheese and stewed tomatoes.

    When cheese is melted, add cooked shrimp. Simmer 5 minutes.

    Serve over rice. If you need to, thicken with 3 tablespoons of flour in water. We like ours thin.
