Shrimp Casserole

Ingredients

  • 1 1/4 lb. cooked shrimp
  • 1 can mushroom soup
  • 1/2 large onion, chopped
  • 1/2 tsp. garlic salt
  • 3/4 c. grated cheese
  • 1/2 c. sour cream
  • 3/4 c. Minute rice, cooked
  • 1/2 Tbsp. lemon juice
  • 1 Tbsp. margarine
  • salt and pepper to taste
  • 1/2 bell peppers, cut in rings and parboiled 2 minutes

Directions

    Saute onion in butter until tender.

    Make sauce by adding the soup, lemon juice and seasonings.

    Fold rice and shrimp into sauce. Last fold in sour cream and pour into buttered baking dish. Sprinkle grated cheese on top, then decorate with pepper rings. Heat in oven at 325° for 30 minutes.
