Shrimp Casserole

Ingredients

  • 1 lb. small shrimp
  • 4 stalks celery, cut in small pieces
  • 4 oz. jar pimentos, sliced or red pepper instead
  • 8 oz. can water chestnuts, sliced
  • 1/2 lb. Swiss cheese, grated (low sodium)
  • 1/4 c. scallions, chopped
  • 2 (10 oz.) cans cream of shrimp soup (undiluted)
  • breadcrumbs

Directions

    Mix all ingredients together.

    Place in casserole which has been buttered and bread crumbs spread over bottom.

    Bake for 1 hour at 350°.

    (Serve over rice which can be cooked in tightly covered ovenproof container in oven at the same time to conserve energy.)

    Serves 4 to 6.
