Ingredients

  • 2 lb. cooked and peeled shrimp
  • 3 Tbsp. oil
  • 1/4 c. diced green pepper
  • 1/4 c. minced onion
  • 2 Tbsp. butter
  • 1 c. condensed cream of tomato soup
  • 3/4 c. uncooked rice
  • 3 Tbsp. sherry
  • 1 c. heavy cream
  • 1 Tbsp. lemon juice
  • dash of cayenne
  • 1/8 tsp. mace
  • 1/2 c. almonds
  • 1 tsp. sage
  • dash of pepper

Directions

    Combine shrimp with oil and lemon.

    Chill until crisp.

    Stir often.

    Saute green pepper and onion in butter.

    Drain shrimp lightly.

    Add all ingredients except almonds.

    Pour into 2-quart greased casserole.

    Sprinkle with almonds.

    Cover and bake 20 to 30 minutes at 350°.
