Shrimp Casserole

  • 1 1/4 lb. shrimp, cooked and drained
  • 1 Tbsp. margarine
  • 1/2 large onion, chopped
  • 1 can mushroom soup
  • 1/2 Tbsp. lemon juice
  • dash of garlic salt
  • salt and pepper to taste
  • 3/4 c. rice, cooked
  • 1/2 c. sour cream
  • 3/4 c. grated Cheddar

Directions

    Clean and boil shrimp.

    Saute onion in margarine until tender. Make a sauce by adding soup, lemon juice and seasonings.

    Fold rice and shrimp into sauce.

    Fold in sour cream and pour into 1-quart buttered baking dish.

    Sprinkle grated cheese on top. Heat in 325° oven for 30 minutes.
