Ingredients

  • 3 Tbsp. oil
  • 2 sliced onions
  • 1 c. boiling water
  • 5 diced potatoes
  • 1 Tbsp. salt
  • 1 lb. cooked shrimp
  • 1 pt. half and half
  • 1 pt. sour cream
  • 8 oz. cream cheese
  • 1 c. grated American cheese
  • 2 Tbsp. parsley

Directions

    In hot oil, saute onions until tender (use large kettle).

    Add water, potatoes and salt.

    Cover and simmer until tender.

    Add shrimp.

    Heat milk and cheese ingredients until melted.

    Add to shrimp with parsley.

    Depending on the thickness you desire, you may want to add more or less milk.

    Chicken may be substituted for shrimp.

    Can be made in crock-pot.
