- 3 Tbsp. oil
- 2 sliced onions
- 1 c. boiling water
- 5 diced potatoes
- 1 Tbsp. salt
- 1 lb. cooked shrimp
- 1 pt. half and half
- 1 pt. sour cream
- 8 oz. cream cheese
- 1 c. grated American cheese
- 2 Tbsp. parsley
Directions

1In hot oil, saute onions until tender (use large kettle).

2Add water, potatoes and salt.

3Cover and simmer until tender.

4Add shrimp.

5Heat milk and cheese ingredients until melted.

6Add to shrimp with parsley.

7Depending on the thickness you desire, you may want to add more or less milk.

8Chicken may be substituted for shrimp.

9Can be made in crock-pot.
