Shrimp Creole

Ingredients

  • 1 lb. fresh shrimp, shelled and deveined *
  • 1 1/2 Tbsp. butter or oleo
  • 1/2 c. chopped onions
  • 1 clove garlic, finely minced
  • 1/2 c. green pepper, chopped
  • 6 medium, ripe tomatoes
  • 2 tsp. salt
  • 1/8 tsp. pepper
  • 2 bay leaves
  • dash of cayenne pepper
  • 3 c. hot, cooked rice

Directions

    Saute onions, garlic and green pepper in butter or oleo, cooking until soft over low heat, about 10 minutes.

    Peel tomatoes and cut into eighths.

    Add tomatoes, salt, bay leaves, pepper and cayenne and continue to cook, uncovered, for about 10 minutes, stirring often.

    Add shrimp; cover and cook 10 minutes longer. Remove bay leaves and serve at once on hot rice.
