Ingredients
- 1 1/2 c. chopped onions
- 1 c. chopped celery
- 2 medium green bell peppers, chopped
- 2 cloves garlic
- 1/4 c. butter or oleo
- 1 can (15 oz.) tomato sauce
- 1 c. water
- 2 tsp. parsley
- 1 tsp. salt
- 1/8 tsp. cayenne pepper
- 2 bay leaves (optional)
- 1 tsp. basil (optional)
- 1 lb. shrimp, cleaned
- 3 c. hot cooked rice
Directions

1Cook and stir onions, celery, green peppers and garlic in butter until tender.

2Remove from heat; add tomato sauce, water and remaining seasonings.

3Simmer uncovered 10 minutes.

4Add more water if needed.

5Stir in shrimp. Heat to boiling.

6Cover and cook over medium heat 10 to 20 minutes or until shrimp are pink and tender.

7Serve over rice.

8Makes 6 servings.
