Ingredients
- 2 lb. cooked, cleaned shrimp
- 3/4 c. oil
- 3 Tbsp. flour
- 1 bunch chopped green onions
- 1 large chopped onion
- 4 green bell peppers, chopped
- 1 (6 oz.) can tomato paste
- 2 tsp. salt
- 2 tsp. black pepper
Directions

1Boil shrimp and save stock.

2Make a roux by browning the flour in heavy skillet and adding oil.

3Add onions and green peppers; cook until tender.

4Add tomato paste, salt and pepper.

5Cook and stir over medium heat for 15 minutes.

6Add 1 cup hot stock from shrimp.

7Cook and stir 15 minutes more.

8Reduce heat to simmer and cook 1 hour.

9Stir often.
-
10Add shrimp last 10 minutes.

11Serve over rice.

12Add more stock or seasoning if desired.
