- 1 medium onion, finely chopped
- 2 Tbsp. butter
- 1 small green pepper, chopped
- 1 stalk celery, chopped
- 1 bay leaf, crushed
- 1 tsp. snipped parsley
- 1 tsp. salt
- 1/8 tsp. cayenne pepper
- 1 (6 oz.) can tomato paste
- 2 c. water
- 2 c. cleaned cooked shrimp
- 3 c. cooked rice
Directions

1In 2-quart saucepan, cook onion in butter, stirring, until onion is tender.

2Stir in remaining ingredients except shrimp and rice.

3Cook over low heat for 30 minutes, stirring occasionally. Stir in shrimp; simmer for 5 to 10 minutes longer.

4Serve over cooked rice.
